Monitoring Fermentation: When is My Beer Done?

Fermentation is one of the most critical steps in brewing. But how do you know it's really complete?

Signs of Active Fermentation

  • Bubbling in airlock - CO2 escaping

  • Kräusen - Foam head on beer

  • Dropping gravity - Sugar converting to alcohol
  • When is Fermentation Done?

    Fermentation is complete when:

  • 1. No more bubbles in airlock (but caution: not reliable!)

  • 2. Stable gravity over 2-3 days

  • 3. FG reached - Expected final gravity
  • Measuring Gravity Correctly

  • 1. Use clean sample tube

  • 2. Note temperature - Correct to 20°C

  • 3. Don't pour sample back - Infection risk
  • Typical Final Gravities

    Beer StyleTypical FG

    Pilsner1.008-1.012
    IPA1.010-1.015
    Stout1.012-1.018
    Wheat1.010-1.014

What to Do with Stuck Fermentation?

    If fermentation stalls:

  • 1. Raise temperature - 2-3°C warmer

  • 2. Swirl fermenter - Rouse the yeast

  • 3. Fresh yeast - Emergency: re-pitch
  • Calculating Attenuation

Attenuation shows how much sugar was fermented:

    Formula: (OG - FG) / (OG - 1) × 100

Use our ABV Calculator for precise calculation!

    My Tip

Better to leave the beer a few days longer than bottling too early. Unfinished beer can lead to bottle bombs!
