The Key Minerals

Calcium (Ca)

  • Effect: Promotes enzyme activity, lowers pH, improves yeast performance

  • Target: 50-150 ppm

  • Effect: Emphasizes hop bitterness, makes it "crisper"

    The ideal mash pH is 5.2-5.6. Wrong pH can cause:
