Cleaning and Sanitizing - The Essentials

"Relax, don't worry, have a homebrew" - but only if everything is clean! Infections are the most common reason for failed batches.

Cleaning vs. Sanitizing

Cleaning: Removes dirt, grease, organic residue
Sanitizing: Kills microorganisms

Clean first, then sanitize - this order is important!

Cleaning Products

PBW (Powdered Brewery Wash)

  • • Alkaline, dissolves organic residue

  • • Soak overnight for stubborn dirt

  • • Dosage: 10-15 g/L
  • OxiClean / Sodium Percarbonate

  • • Cheaper alternative to PBW

  • • Same effect

  • • Dosage: 10-15 g/L
  • Dish Soap

  • • For light soiling

  • • Rinse well!
  • Sanitizers

    StarSan

  • • Acid-based, no-rinse

  • • Contact time: 30 seconds

  • • Dosage: 1.5 ml/L

  • • Foam is safe!
  • Chemipro Oxi

  • • Oxygen-based

  • • Contact time: 2-5 minutes

  • • Rinse well
  • Alcohol (70%)

  • • For quick sanitizing

  • • Spray bottle is handy
  • What Needs Sanitizing?

After boiling - EVERYTHING touching beer:

  • • Fermenter

  • • Airlock

  • • Tubing

  • • Bottling equipment

  • • Measuring tools

  • • Hands!
  • Before boiling:

  • • Cleaning is enough (wort gets boiled)
  • My Routine

  • 1. After brewing: Immediately rinse with hot water

  • 2. If needed: Soak in PBW/OxiClean

  • 3. Let dry

  • 4. Before use: StarSan solution

  • 5. Let drip dry - done!
  • Common Mistakes

  • 1. Abrasive cleaners - Scratches harbor germs!

  • 2. Not drying - Moisture = germs

  • 3. Rinsing StarSan - Not necessary, only hurts

  • 4. Wooden spoons - Only for mashing, never fermentation
  • Tips

  • • Spray bottle with StarSan always ready

  • • Use clean towels

  • • When in doubt: Sanitize again!
  • Cleanliness isn't rocket science, but it's the difference between good beer and drain pour!
