The Complete Hop Guide

Hops are the soul of beer. They provide bitterness, aroma, and flavor. But which hop fits which beer?

Hop Types by Usage

Bittering Hops

Bittering hops have high alpha acid content (10-20%) and are added early in the boil (60 min). Popular varieties:

  • Magnum (12-14% AA) - Neutral, clean

  • Columbus/CTZ (14-17% AA) - Bold, resinous

  • Warrior (15-17% AA) - Clean, mild
  • Aroma Hops

Aroma hops have lower alpha acids (3-8%) but intense aromas. They're added late (10-0 min) or as dry hops:

  • Cascade (5-7% AA) - Citrus, grapefruit, floral

  • Citra (11-13% AA) - Tropical fruits, mango

  • Mosaic (11-13% AA) - Berries, tropical, earthy

  • Simcoe (12-14% AA) - Pine, citrus, earthy
  • Dual-Purpose Hops

These hops work for both bittering and aroma:

  • Centennial (9-11% AA) - Citrus, floral

  • Chinook (12-14% AA) - Grapefruit, pine

  • Amarillo (8-11% AA) - Orange, floral

    Hops by Beer Style

  • IPA/Pale Ale: Citra, Mosaic, Simcoe, Cascade

  • Pilsner: Saaz, Tettnanger, Hallertauer

  • Wheat: Tettnanger, Hallertauer, Perle

  • Stout/Porter: East Kent Goldings, Fuggle

  • Belgian: Styrian Goldings, Saaz
  • Calculating IBU

Bitterness is measured in IBU (International Bitterness Units). Use our IBU Calculator for precise calculations.

    Tips for Using Hops

  • 1. Buy fresh - Hops lose aroma over time

  • 2. Store cold - Best vacuum-sealed in the freezer

  • 3. Don't over-bitter - IBU should match residual sweetness (BU:GU ratio)
